    Using a MES 30".  When using the water pan to add moisture, the drippings will put a fat layer on top of the water.  Will this keep the water from evaporating, and if so, what do others do to deal with this?  I know how to separate the drippings from the fat afterwards (refrigerator method)...

    New member from Panama City Beach, FL.  For several years I have been using a CharGriller Duo 5050 with side firebox.  Recently, I started also using a Masterbuilt 30" electric smoker, model 20071914.
