Smoking Brisket in the cold - Oklahoma Joe's Horizon

I don't have logs. In-laws used to live in Tennessee and I'd raid their woodpile when I visited. That's no longer an option so I usually pick up quarter splits from the local 'cue joints and then I cut them in half to better fit in my firebox. By "chunks" I simply meant smaller pieces of oak as...

    Prime vs choice brisket

Every brisket I've done in the past has been without the crutch, hunter rose. Did it this time in the interest of time - and fuel. It tastes good but doesn't have the good bark that I'm used to. My wife's family is all from Texas so, of course, I try to stay true to the state when I do brisket...

    Ref; Should I start over...

Like rob g, I've used ziploc bags and put them on a tray in the fridge. The last batch I vacuum sealed them and did NOT use the tray. Saves space (a good thing around the holidays) and turned out fine. So no leaks, regardless of how I did the cure. The pro of the vacuum bags is space and for...

    Prime vs choice brisket

Thanks for clarifying the wrapping vs not. I, too, do it Texas style and wrapped for the first time yesterday (Costco, 12 lb prime). Not as much bark as I like - and not the strong smoke flavor that I favor. I'll not wrap next time and just start it earlier.

Smoking Brisket in the cold - Oklahoma Joe's Horizon

Well, not really cold but not as warm as it could be . . . New Oklahoma Joe's Horizon and my first brisket on this smoker. Used a chimney to get lump charcoal going and added it to the lump in the firebox about 7 AM and probably 33 F. Took awhile go get the temp up so that's when I put the rub...

    Assembled my Highland yesterday

I'll take the two narrower grates, wrap in heavy duty foil, and put one at an angle from above the FB opening and the other flat to hold it in place. Will also use a water pan, of course, on top of that as I'm sure there'll be enough heat. Goal is to block the IR and slow down the blast of...

    Assembled my Highland yesterday

Didn't see much smoke come out where it shouldn't but have gasket for the CC door that I'll probably put on before I smoke. Biggest issue, right now, is to control the IR from the FB that I need to control. And will hold off on the brisket for awhile and will probably do ribs on Sunday - and...

    Assembled my Highland yesterday

I just assembled my Highland yesterday and seasoned it for about six hours. Just a couple of observations and responses to other posts I've seen. Easy enough to do solo although having a second set of hands to hang the firebox (FB) would have been nice. Drilled four more holes for the FB so...

    Epic Fail on Oklahoma Joe

I'd advise getting the brisket closer to 200. At 180, it's barely out of the stall and till be hard to chew.
