HELP!!! Turkey for tomorrow starting now.

I would not brine it again. Too much. If I remember from a few years ago, the brine from WF was a bit "clovie". So I would inject any other flavors. I am going with a simple rub and maybe some Sam adams winter lager to spray on at the end, and some for drinking. Rub under the skin if you do...

HELP!!! Turkey for tomorrow starting now.

Yes, I agree with jweller, 12-15 is plenty. When I wrote as long as you can, I meant in your situation. Too long is not necessarily better

HELP!!! Turkey for tomorrow starting now.

Don't worry. Yes, fresh turkey, brine it for as long as you can. There are a bazillion recipes here. Choose what you like in flavor and go with it. I use on with bourbon, orange, garlic. My wife got a pre-brined from whole foods. Not my first choice, but whatever. I have done both...

    Offset Concrete Block Hog Smoker

Thanks again.  I think I have all the mods figured out.  The how low question was related to the question of where to place the exhaust pipe relative to the ground.  I am going to increase the size of  the smoking chamber and the firebox.  I plan to heat the pit up with wood prior to coals and...

    Offset Concrete Block Hog Smoker

Hey there, Any other mods since?  I am getting ready for whole hog #2.  My daughter's first birthday hog was such a hit with family and friends we are doing it again.  I am planning on making some mods to my block pit.  I need a good lid, other than the piece of old ply I have been using.  I am...

    Brinkmann Trailmaster Limited Edition

Tex, there is a whole other thread on lump, please read it over. Lots of good discussions.  IMO lump is much better for flavor and heat.  It does get hotter than briquets.  When I am doing a big smoke I use both.  Briquets are of course more consistent. Wicked Good is the best I have ever...

    oklahoma joe's smoker?

A few have suggested CL, I will start looking.  Went to Home depot to try and look at OK Joe, none to look at.  None at my area lowes, none at my area ace.  I will keep looking.  From the descriptions online it does seem to be a thicker heavier larger smoker than the BTLE.

    oklahoma joe's smoker?

Okay, so now I am torn..... I thought I had settled on the Brinkmann Trailmaster....  But from what I have been reading, for a bit more money the Char Broil OK Joe's is a bigger thicker smoker.  Anyone got a direct comparison between the 2?  I really can't justify a Horizon on the family budget...

    Looking to buy a smoker!

Last summer for my daughter's 1st birthday, I built a cinder block smoker for a whole hog roast.  It worked out great.  I built it with a firebox on one end which i use as a small grill every now and then.  It is at my M-I-L place, it is not my primary one, too big for small things.  But it...

    Charbroil "Outlaw"

Hey PaDan, I looked around, the Brinkmann Trailmaster is pretty sweet.  Its a bit more expensive, around 300 or so, but it looks way better constructed and it has a large area.  I am going to continue to look around.  I am trying to squeeze this into a father's day present.....  I figure if I am...

    Charbroil "Outlaw"

I have not used a Charbroil, I have been a CharGriller man for a while. I want hear what everyone has to say.  I am thinking about replacing my Char Griller barrel.  It the smaller one under 600" cooking surface, with the fire box.  I want to keep with this style, but I have heard some of the...
