    Mcmaster-Carr for supplies.  They have all that you mentioned. This isn't a pellet smoker, uses charcoal and wood chunks.  The fire sits above a grate and as the ash falls through the grate, more charcoal drops from the chute into the fire (hence the gravity fed term). Hope this helps!

    I think I can nearly get a full 20 lb bag of Cowboy in the chute.  It's 6"x6" and opens up to 6"x8" at the firebox.  The chute is probably about 30" tall.  I can get about a 16 hour cook out of a 20 lb bag at 225 degrees (cooking chamber is approx. 30"x30"x30".  The Digi Q burns fuel a little...

    I'll just throw this out there...I've had better success with cooking the flat and point separate.  Flavor, smoke ring, tenderness, etc., have turned out better when separated. Wonder what I am missing when doing a whole packer? James--are you sold on cooking separate now or will you go back...
