    Chris...do you find that with dust you don’t have to let it mellow then? The last batch I did was with pellets and was maybe fairly heavy. I had to let it mellow in the fridge for a good 2-3 weeks before it was good.

    Honestly, I have yet to find something that doesn’t freeze well. If I fire up the smoker, I fill the smoker! I then vac pac it all and freeze it in 2-4 person portions. I’ve done ribs, brisket, Turkey breast, chicken pieces, pork loin, pulled pork, stuffed peppers, fatties, etc...

I occasionally had issues with flare ups...but could control them rather well by soaking the chips and chunks ahead...

    Cheap Meats!

    You know Bear, I’m trying to remember if I filled the tube with Peach/Pecan or Hickory. I’m looking in the garage and the Hickory bucket is on top. So it may have been that! And it is good, just not quite as smoky as other things I have done this same way.
