Most of what you say is true, but don't put rub on the outside. The oil will just burn the rub and you don't get the flavor. If you try to do another bird you will find that it effects the flavor. Either inject the bird or brim it for 12 to 24 hrs.

Sorry to hear about your problem the model 40. I've had the model 30 since Dec 2009, all I can is that it has worked great. What I don't understand is why some many people are havng problems with their 30 & 40s. Masterbuilt needs some quality control.

I have used many different kines of wood chips. Keep them small. I like some dry and some socked, doing a mix has given me a greater smoke time and no flar ups.
I like to soak the wood and mix with some dry wood and place it in the feeder. I have been using this method for over two years. By the time the dry wood is used up the soaked wood is just coming on. I use an electric smoker MES30. I hope this may be of help some one.
Just as others have said, foil the drip pan and water pan. Then wash the racks in the dish washer. If i see a large amount of build up I wipe it before it cools with vinegar. Never put anything in there you would not eat, except the wood chips.
Kevin13, I think you should age the cherry before chip and you use it. I do some wood working, and have a plainer that i have tried on some black walnut. I hope the walnut is good, I normal use apple, cherry, and mesquite.
I now have my MES 30 on a stand / wheels, thanks to my sons fathers day gift. Sure makes easier on the back not having to been over. I can carry all the items I need to do the job. The shelf on the left is nice so I don't have to carry another table. When I get the chance I,ll a better picture.
