Maple Wood
how about red maple? I have a ton or red maples in and around my property that I have been using as firewood for the past 8 years and am going to be taking down another 7-8 trees this summer and if anyone recommends it, I'll set some aside for the smoker...?- scruffer

dude, i just got the same thing for my bday and have only used it once, but damn an i hooked! did baby backs, spare ribs and a pork butt and they were awesome. coming up with excuses right now to have another q-fest... congrats and enjoy!- scruffer

i'm not sure what you have for spices over there that compare but, when i was in ghana i used "peppae" a lot. not sure of the spelling but it was a reddish/orange hot pepper powder which had some really nice heat/flavor for pretty much anything. i used it on diff kinds of meats/chicken as a...- scruffer

I found SMF while searching various sites to try and learn how to use the new smoker I got and the amount of info for a newbie was just amazing and obviously the great people with their expert advice, tips and help definately got me got me hooked! Thanks to everyone who gave me great tips, recipes and advice for the maiden voyage of my new brinkman offset smoker! I did a babyback rack, a sparerib rack and a 7lb pork butt for some really tasty pulled sangies! everyone loved the food and left full which is all I could ask for... -
