This PID controller is from Auber Instruments and has all or most of the features used on the Smokin-it digital electric smokers and the Auber instruments plug and play PID controllers without Wi-Fi.

You can also build your own Smokin-it style controller that has a 6 step temperature schedule. This unit doesn't have wifi and only one meat probe but is great for sausage and holding food after it reaches internal temp. Cost is $ 80.00...
From what I've seen on YouTube you can set the schedules on your phone with the WiFi unit. That alone would sway me. The remote monitoring is nice too.
Well that's interesting. I wonder if it has something to do with the temp of the actual controller, maybe it's what needs to warm up? 3 hours to warm up seems like a lot of time for an insulated smoker but then again I've never used my electric in that cold of weather. I have an MES digital.
This might sound crazy but you get a different flavor between the Bella's / Smoke Daddy style smoke generators and true cold smoke generators. I guess it has to do with removing a lot of the chemicals and moisture with the cold smoke generator.
