    Roll Call

Thanks for the add.  I am a little late at responding.  I am an Iowa farm boy at heart, even though the military moved me around a bit and deposited me in Papillion, NE.  Got a recipe of Joe Bant Polish Sausage in the Smoker right now.  My primary unit is a Cabela's Smokehouse Pro 100, back up...

First post, not new to smoking but got new Cabela's pro 100 electric smoker.

Steve, Have you ever experienced that these smokers seem to take forever to heat up? I can never seem to get mine to heat to 170, barely 150 at times. I did change the heat element once, but so far that's all I have replaced. Any ideas? Currently I am smoking sausages, outdoor temp is 41...

Using your coffee grinder for a spice grinder

I dedicate a grinder to spices as well.  Especially since I dehydrate and grind a lot of hot peppers.  I won't use it for coffee again.  Not sure if I want to risk tasting habanero coffee....

Al, thanks for the heads up.  Sprky, will do... BTW, the ribs in my profile pic are from a nice set I did in my Bradley.

Question regarding venison sticks or sausage??

I've made Venison Pepper sticks both ways (pork and beef).  Taste isn't much different between the two.  I usually mix my batches 50/50 and use 80/20 beef.  That gives enough fat to bind it and you end up with a good tasting product that isn't overly greasy.

    Cabela's Pro 100 update

Got my replacement in yesterday.  All is well!  This one works great and is now seasoned.  Time to get some meat thawed out and find some sawdust.  Life is good.  Thanks to the wonderful Customer Service rep who called me to help work through this issue.  I can almost taste that summer sausage...

    First Post (Kind of) - Cabela's Pro 100 issue/problem

Thanks plj & Dave.  Left it on the deck all night (10 degrees this AM).  Plugged it in and presto: 215 degrees.  It now rests in Cabela's return department.  New one should arrive before Christmas, which is good, I need to make some summer sausage for Chirstmas gifts.  Limping my ribs along in...

    First Post (Kind of) - Cabela's Pro 100 issue/problem

Thanks guys, any help is welcome.  I had to return my first Bradley to them a few years back as well.  Door wouldn't seal on that one.  This looks like an electrical/controller problem.  It has now stalled out around 185 on the display.

    Here in Iowa

Welcome Andy.  I'm originally from the Knoxville/Pella area, but after serving nearly 22 years in the Air Force, I now reside near Papillion, NE.  Great to finally be close to home.  Happy smoking!

    First Post (Kind of) - Cabela's Pro 100 issue/problem

I responded earlier in Pappa Bear's Cabela's Pro 100 post, but this one is my first thread here.  I just got my Cabela's Pro 100 smoker last Saturday, got it out of the box this week and was preparing to season it.  When I turn it on the display says 215.  The burners won't heat up until I set...

First post, not new to smoking but got new Cabela's pro 100 electric smoker.

Hi there.  My first time on this forum as well.  I just picked up a new Pro 100 from Cabela's as well.  I've been smoking for the past couple of years in a Digital 6-Rack Bradley and got tired of having to finish practically everything in the oven.  I believe it is made by PK Smokehouse.  This...
