The WSM 18 is getting up to temp now after a short pre-heat with a small fuel pile. I just added a bunch more fuel, arranged for optimal burning, and have 2 medium cherry chunks and 1 medium hickory chunk ready to go in with the chucky. Contemplating a dry smoke, or to use the bowl with broth...
This just makes me want to go to sleep now and wake up tomorrow so I can get my Chucky going faster... I'll follow most of the same step, but I will add in pre-running the night before, give me something to do later...other than make smoked burgers for dinner tonight. I use a foil pan as well...
An absolute success!!! My Wife and I were savoring every last bite to the very end. We ate almost the entire fatty! It was beyond my wildest expectations... I will be making this again more than a few times this year!
