My smoker will easly reach and hold as high as 500 degrees, I was wondering about doing a wood roasted turkey, I was going to brine them 2 15 lbs birds and get the smoker up to 500* the cover turkeys and put them in for 45 min and back off temp to 325 and finish uncovering for the last hour...
