    Beef Roast (with Q View)

We had picked up a bottom round roast, so I thought I'd give it a try on the smoker (Horizon offset) instead of the normal pot roast approach.  I did a little research on the site and learned that the bottom round isn't the best cut to do, but what the heck?  Any excuse to try something new on...

    Beer can chicken

Beautiful result!  I tried melted butter instead of oil the last time I did chicken, and that turned out pretty well too. My wife bought me one of those ceramic beer can chicken things -- it has a reservoir in the center for the liquid and the bird sits in a bowl that collects the juices.  It...

    Roast

I'm going to try a bottom round roast this weekend.  I've read some debate as to whether that's a great cut to smoke or not, but what the heck?  I'll let it go low 'n slow, maybe make some of Chef Jimmy J's au jus with it, and see what happens.  A few strips of bacon on top can't hurt, right? I...

    First Fatty! (with Q View)

Good advice, guys.  Will definitely upsize next time -- wasn't sure they'd keep all that well, so glad to hear that they can be frozen.  Sausage is next on the agenda, I think, or maybe even some chicken sausage -- throw in some Swiss, ham and go for a cordon bleu vibe.

    First Fatty! (with Q View)

I was inspired by stevecylka's post about doing a bacon cheeseburger fatty for Easter and decided it was time to try one for myself.  I kept it simple, having a picky eater in the family, and just went basic -- ground beef, cheddar & mozzarella, and bacon of course!  I went light on the rub and...

    Hello from Kentucky

Hey Ryan -- no, there really aren't any good outlets in Lexington.  You can find a few things at the outdoor living/patio stores, but the selection is pretty limited and normally not what I'm after.  I've been scouting around to see who carries what brands of lump but have been disappointed so...
