jumping into the smoke
My traeger has the digital thermostat on it and you can replace your 3 setting dial with it if you want. I do my steaks at the 225 setting for around 30 minutes to get the smoke then will turn up to 350 for final grill. I dont flip until it has been approx 10-15 min at the higher temp.
