Brine that bird to start with
Maybe start out an hour to hour and a half at around 200 degrees then up the smoker temp to 325-350 that will give you a good juicy bird with crispy skin.
Tip's brine doesn't use a lot of salt you can brine overnight then take it out and pat dry and it won't be too...
Since moving to north Florida Thanksgiving is much easier no longer doing 8 to 15 birds which is nice. (Used to feed a lot of the hospital staff where my wife worked)

Take a screwdriver and break that drywall mud and see if you have a set screw under it. Just do it easy so as not to puncture the copper tubing shouldn't be that hard to break it up
