    Without a hitch. Dried 30 pounds of jerky followed up with butt and ribs. Ribs were cooked to hot, still very good just charred a bit. Fixed that with a heat diffuser and digital heat proves that read up to 700 degrees Fahrenheit. My old probes only read up to 212 f. I think I was getting up...

    Smoking butts and chicken quarters but not at the same time. Butts are at 220 and the chicken will be around 300 once the pork is through. Wish I could post a video.

    I works very well. I'm actually able to cook on the lower side after putting a heat diffuser over the heat outlet from the firebox. Of course, a custom job does not come with instructions so there has been a lot of tweaking. It cold smokes as fine as any other. The effort has been sealing it...
