Mongo - Stumps Clone Build - Gravity Feed Smoker

Sometimes even with a bigger valve establishing initial airflow can be an issue. I found that big valve of mine for $5 on ebay. You may need to buy, or make, a little blower system to attach to your valve. Usually once the coals are pretty well established it will burn just fine on its own...

    Pear wood

It's an excellent smoking wood. Several companies package it in chunks for resale. I'd say you'd probably ought to let it season for a few months.

    Brisket Overload!

I usually allocate 8 or 9 hours for a 12 pound, trimmed brisket, at 250. What do you consider the ideal internal temperature for removal?

    Brisket Overload!

I have been asked to cook brisket for a church event in about a month, and I need some help. I have a really large gravity feed (Stump's style) smoker, and I will have - probably - 15 briskets in it at the same time. I can handle the brisket just fine space-wise, but with that kind of load at...

    Cold Weather Smoking

I have a large gravity feed smoker which lives in my garage during the off-season (if there is such a thing). I am considering adapting a stove pipe stack extension to it and venting it through a window to the outside, thus being able to smoke during inclimate weather without freezing my tuchas...
