If it wasn't for Bad Luck

Landscapers cut my fiber to the house. It was clearly marked and I even spoke to them and pointed out the paint markings on the grass. Three hours later they cut the line. Our good friends at AT&T said they would come fix the line in 4 days. They did fix it in 4 days, but we were without...

Looking At Getting A Pellet Smoker, Thoughts?

I bought the Green Mountain pellet grill 5 years ago. I don't get the flavor that I got using the Masterbuilt electric smoker, but it sure makes it easy for long cooks. It is a perfect smoker for salmon. Over 40 pork butts have been through the GVG. Excellent results with the pellet grill and a...

Liquid smoke or no liquid smoke?

I have used LS during curing for Canadian bacon. I have found that it has a somewhat bitter flavor, so not much is added for the 12 day cure. I have a bottle of Stubbs LS and I just read the ingredient list. It has about 8 ingredients one of which is soy sauce!!!!!! I will not buy anymore of...

    Medical Alert Systems ??

I bought my wife a Samsung watch since we have Samsung phones. The watch has fall detection and I test it every month. When a fall is detected, it starts a timer on the watch and if the user doesn't press the button, it calls me. If I don't answer, it calls 911.

    Brining and smoking salmon

I wet brine salmon for 2-3 hours, rinse, pat dry, and apply my rub. Then into the refrigerator uncovered overnight. When I get it out to smoke, the surface is tacky...which is good for attracting smoke. The brine I use is one gallon of water, 1 cup of kosher salt, and 1 cup of brown sugar. Once...

    RO 100% charcoal pellet deal

I tried those Royal Oak charcoal pellets. They seemed too hard for the auger on my GMG grill. Now I mix them with other, softer pellets to prevent jams in the auger tube. Since then, I use them in the pellet tube as a supplement smoke generator. That seems to work and helps with the smoke flavor.

    Smoked cheese questions.

I smoke cheese for 2-3 hours on cold days, 45 degrees or less. All of it will be vac sealed until used for making pimento cheese spread, or sliced for a cheese plate when we have visitors. I have stored the cheese for up to 2 years with no problems.

    freezing hot smoked salmon

I have done it dozens of times. I let the fish cool after smoking and then double bag it for the freezer. When I am NOT lazy, I vacuum pack single serve portions. The smoked salmon is still good 6 months later.

1st try at Canadian Bacon..do I have this all right?

I dry cure the pork loin. I cut the loin into 3 equal size pieces and place them in a zip lock bag. I mix #1 cure with brown sugar and put the mix into the bags. The amount of the mixture is determined by the weight of each piece of the loin. I cure for 2.5 days per inch of thickness. Each bag...

Inexpensive or Quality Pellets in Hopper When Using a Smoke Tube?

Update on the Royal Oak pellets. I used them this morning and I found that they are too hard to make it through the extruder. While they DID get through and started smoking like normal, the noise from the extruder sounded like it was trying too hard to move those pellets. I ran the drive to...

Inexpensive or Quality Pellets in Hopper When Using a Smoke Tube?

I use pit boss pellets for the heat and better pellets for the tube. Just this week I bought some Royal Oak 100% charcoal pellets. I will use them for heat without the tube to see if the flavor profile works. If it does well, those will the be only pellets that I use on the Green Mountain grill.

    Southern Pimento cheese

Since we all smoke stuff, I smoke NY sharp cheddar and after a few weeks, I shred with the food processor to make pimento cheese. Sometimes I add bacon. Try it. You will like it I should add that I smoke about 20 pounds of cheese in the winter and vacuum pack it in 2 pound portions for later use.

Adding Extra Smoke to Pellet Smokers

I have always put the tube horizontally. Never had a problem. I put it on the opposite end from the smoke stack in my Green Mountain pellet grill. Enough air leaks through the lid edges to keep the tube lit.
