A friend suggested a small fan blowing towards the chip holder (3 holes in there), helps keeps the airflow and chips burning/smoking....works well.

I spray my racks and drip pan with PAM before starting. Rinse off better when finished. After 7 years I have only cleaned the racks and pan. If short smoke and most comes off I put in dishwasher. For longer smokes I use steel wool on both, works great!
I'm purchasing 1/2 a cow and 1/2 a pig for the first time in a few weeks. I've done some research on cuts for each one, but what would you suggest as my best options?
I've had a MES for many years and love it. Yes, temp gauge is not accurate, haven't had the best of luck with sticking another temp gauge in there w/o it touching one of the metal racks. I do have an idea mine is off about 14 degrees (hotter).
