Chef.. not wanting to start a flaming war, but to let you know ALL CAPS is considered "Yelling" and not only that hard to read.
I hope things work out for you on the replacement parts.
There are two, one is "built into" the case, meaning you cannot move it, etc. It is for the temp of the smoker, not the meat. The other is a probe on a cable that you can insert into the meat.
Be sure to "season" the smoker before using it... burn at max temp for 2 - 3 hours, with some smoke the last 1/2 hour or so.. when you smell it, you will know why this important
