    I really appreciate your help and it all worked out fine. The thermometer works great and the handbook included didn't give a definite leave it in or not. All of the meat was great.

    I am cooking with a MES for the first time and this may be a stupid but the built in thermometer do you leave it in the meat while cooking or just use it after the cooking time to be sure of the right temp? Thanks in advance.
