Hey all! I am smoking two 4lb chickens now. The smoker is a electric Brinkman. It took about 25-30 minutes to get up to temp. (225 deg.) Am I safe or did I create a breeding ground for bacteria? I did get the smoker up to 200 deg. before adding my birds. Any input would be much...
