Started hot smoking in 2010 in hopes to learn how to smoke for a restaurant that I own. Researched every smoker under the sun and finally invested in a Cookshack which turned out to be a great investment. Since then, I've wanted to make bacon, and thus embarked on another research project to cold smoke. Now I've both, trying to keep things simple and repeatable.
