    If you were to put two table spoons of #1 cure in one gallon would it still be safe? Had 22lbs of belly bacon in thought I did two gallon batch but only gallon was left afeter 14 days still fully sumereged.sounds like pops brine is 42ppm so would it still be safe on one gallon? Thanks nathan

    Just rinsed it and patted dry let sit in refrigerator over night. Was not salty pretty much just tasted like Canadian bacon as far as flavor.

    fish ready to put into brine fillet were half to one inch thicka little over three days in brine dry over nightsmoked about seven hours till it was 140 turned out great

    I've smoked catfish before and it turns out good I thinks pops brine would just give a better taste it is a oily fish so it doesn't dry out when you smoke it
