I've been experimenting with ABTs since I had a bumper crop of jalapeños last summer. I made some for a community party last week and they were a big hit. I used cream cheese with onions and chives mixed with cheddar. I wrapped them with bacon and smoked them with Apple chips.
I am new to the forum but not new to smoking, grilling and barbecuing. I do like to try new receipts. I just got a MES and have used it a few times with good results.
I preheat my smoker to 200, add the meat and chips and then reset the heat to 225. Once you get the chips smoking, I never have a problem getting smoke.
