    Pulled it out at 160. While it looks good. Skin was very rubbery and the meat was a bit too. It tasted great and very moist, I can do better next time.

    Hi all, today is the day! I have a 18 lb turkey in my mini. At the 1 1/2 hour mark IT is at 90 degrees. Mini is cruising at 240 with all vents wide open. I may pull the clay diffuser and put in the steamer plate to get the temp up a bit.

    Has anyone accomplished this feat yet? I am going to give it a shot. I have one of these racks to put a whole turkey on: The Spanek Vertical Turkey Roaster (Chrome) — $21.95 YES, it does fit in your oven ... the bird sits down! Even in smaller ovens — the Turkey roaster is just 10" tall...

    What is the piece covering your vent? Looks like something out of the norm. I gotta build me one of these now, I already have the smoky joe. Gotta run to Walmart and pick up a pot.

    That is very slick. And I agree with you on the zinc. Also once it gets seasoned it pretty much seals up all surfaces inside the unit. Great job man!

    PIT BARREL COOKER

    Do these cook differently that the meat doesn't fall apart? How would you cook a butt for pulled pork? I am partial to having a grate to sit stuff on.
