    ~Backwoods Style Build

Hi guys, I am a bit confused as to how a BWS works. It appears the top chamber is sealed from the bottom but there is a chimney at the back with some holes from the chamber into it. However how does the heat from the bottom coal chamber get to the chimney ? Thanks, L

    Sauce for fatties ?

I ended up using the white bbq sauce but added a hint of dijon and hoisin for a sweeter taste was pretty much unfigurable :)

    Sauce for fatties ?

Any suggestions for nontraditional bbq sauces for serving with fatties ? I am doing 6 biguns this weekend for a charity dinner and want to serve with some sauce. I am thinking of the mayonnaise white sauce but want other options also. thanks, L

Anyone have experience with hanging tenders or clod tenders?

the hanger steak is a very nice meaty beefy tasting cut you need to do some trimming though, if they are whole it will have a centre part which is very tough and needs to be cut out. you also need to look at it to see the grain in order to cut it up the grain is fairly large like a skirt steak...

PID fan controller for the drum

yes, I have my valve closed a little more than I would have if it was running without the pid/fan. The ideal way is to put in some form of flapper door, havent really given it much though though.
