There are a few pellet grills that will get up to 500degrees or so. Tec Tec Mini will and the Pit Boss does as well. If you add searing plates they get another 100degrees and seat steaks really well. Just as good as 600degrees over open flame on my Kamado grill.
I am using a PB 700s, I experience temp swings typically between 220 to 235 when set to 225 with an occasional up to 240ish. I've never had it go into the 300s and would personally consider that a defect. Using the Psettings does help me maintain low temps better.
I have a pit boss pellet as well. In case you ever do have to clean the auger the grate will come out when you remove the screws. You essentially have to take the cover off the pellet hopper box, take the auger out, clean and replace. I'ts not as bad as it sounds.
I have the Pit Boss 700s and cleanup isn't a problem. Just remove the grates and heat deflector, no different than most pellet grills. They are made solid and heat controls well.
I had a KAMAdo style smoker for years and went to a pellet grill recently. I really like mine, pellets taste good and it's easy to switch between high and low heat. Cleaner overall and heats up quick with no fuss. You will need to add a smoke tube if you like a lot of smoke.
I had one for a year and just got rid of it. I found it a little small for my taste. Had company for 4th of July and had to grill burgers in several batches due to small size. It does cook great but I found flare ups regularly despite new tin foil almost every cook and cleaning the Pit.
