Just bought 14lb brisket ($1.67lb@Kroger), 2 racks of St. Louis ribs, and had the butcher slice round for jerky. So, I'm going to try to do jerky in the vertical part of my smoker while cooking the brisket. Then go for the 3-2-1 method on ribs at the right time.

It is normally just the wife and I but once I tell the kids(>21) that I'm smoking meat, it ends up like 5-10+ kids show up. So, I need something that can cook everything (beef, chicken, pork, turkey) but not normally all at the same...

I'm in Rockwall, Tx just outside of Dallas. I have an opportunity to purchase a REAL smoker not some thin-metal horizontal cheap smoker/grill. So I'm sure I'll get lots of "help and ideas" on smokers, rubs, etc. I'll post in another different part to ask more questions.
