    No smoke in MES-40

The MES-40 is set up differently than the MES-30 then. From the attached photo, you can see the heating element, and then the lip(s) that the chip tray slides over when inserted. The vertical height of the lip(s), make's for about 1/2" or so from heating element to chips. Note: I've never had...

    No smoke in MES-40

I've had the unit for about 8 months, and followed Delta Dude's instructions for pre-heat, and getting chips started.  The unit has always performed. So, recently I moved, and the movers took care of all the heavy stuff... When I went to use the MES for the first time since the move, I did my...

    Pecan wood igniting in MES

I have one of the newer MES 40 units, and smoke primarily with Pecan chips, vent 100% open. Normally smoke temp set 225-230, and never have had major chip ignite issues of the magnitude you are describing. One thing I do notice is the size of your chip, compared to what I've been using...

    Dutch's "Wicked Baked Beans"

12X9 or a deep 9X9 aluminum baking pan. I prefer the 9x9 deep, as they are stronger to hold the weight without flexing as much.

    Dutch's "Wicked Baked Beans"

Fatties and Beans = YUM! I agree about draining the beans, I didn't drain the first batch I tried. Still came out great, but I like 'em thick also. Good Looking Fattie!
