225 smoke, I have it on a 6x9 cookie sheet for a shield. It is also on the bottom smoking rack, which I consider a good distance away from the heat source.- jrorie

I have an MES 30, and have used the 5x8 pellet smoker the past 5 times I've smoked. The past 3 times I have had a problem with about 2 hours in the pellets burning at a crazy rate and producing way too much smoke. I've tried messing with pellet smoker position and and moving my smoker out of the...- jrorie
