Trying to picture what you explained.
Currently, my MES30 drip tray has been kept on the very bottom of the smoker under the heating element. The HE still has its shroud/cover over it, left that alone to keep the grease/fat/etc from dripping directly on to the element. What I did not do, was...
I'm using the grates and drip tray (foiled) that came with the MES30, so it's a full size tray that I imagine doesn't let much flow past it.
I suppose I could opt for one of those cheap baking trays that can sit on a grate, would be smaller and less restrictive for heat/smoke getting to the meat.
Bought one of those for my MES30, installed per the manufacturer instructions but also zapped two very short self tapping screws from within the smoker attachment and into the side of the smoker (should be no wiring in that wall) to help secure it.
I then bought a roll of that grill insulation...

After the 235f test burn last night, it seemed the x4 was starting to pull within <10F of the auber, I also noticed there is either a delay from the x4 main unit to the remote unit, or the remote unit just displays averages because it's almost always 1-2f off from the main unit.

It's actually much simpler than that.
You're rewiring your MES to bypass its controller and basically turn it in to an always-on heater. This effectively disables/isolates the OEM controller on your MES. I removed mine and tucked its cable down in to the hole it comes out of on my MES...
Me MES30 wiring/circuitry looks different, not sure if this is now what they use or I got some odd model, so I'm unsure how mine would be wired so I can use my new Auber WS-1510ELPM.

That cold smoker kit is fantastic, almost works too well and I found that out the hard way with some chicken breasts...they ended up a bit too smokey, couldn't taste the Bachan's japanese bbq sauce or the meat church holy gospel rub. Whoops.
I mounted mine to the side per the instructions...
After reading through that guide, it looks like the rewiring job converts the MES30 in to a simple on or off device that can now have its power cable plugged in to the back of the PID controller, which will turn the MES30 on/off based on configured temp and what the new sensor reads...it won't...
How does that controller interface/work with something like an MES30? Does it plug in to where the MES30 controller is plugged in on the top/rear of the smoker?
My recently purchased MES30 had the same problem, little to no smoke at max temp. Tried to get the chip tray closer to the heating element, but didn't go as far as you did on the modification mainly because no one had a detailed/photographed process of it yet and I didn't want to break...

I see Auber has a PID controller on sale for $179.99 that apparently works with Masterbuilts, I'm just not sure I want to dump any more money in to this MES30. I do have the top controller from my last MES30, saved it and the grates just in case, might swap that on and see if it makes...
