Take some ground pork sausage, lay it out flat, add some ingredients (recipes vary) like cheese, veggies, mushrooms, etc. and roll it up into a log. Then wrap that log in a bacon weave. do a quick search on here or on google and you will see a ton of recipes.

First smoke went well.
Did a fatty with red peppers, jalapenos, onions, cream cheese.
I loved it but the kids didn't like the BBQ sauce on the top. Will have to try some slight mods for next time.

Just purchased a Louisiana Pellet Grill, and plan on smoking my first fatty this weekend.
I'm from Minnesota, and am an avid hunter/fisherman.
