Hey all - I'm planning on doing some smoked salmon tomorrow. Have it in a 4/1 dry brine right now.
How long will it keep in the fridge after I smoke it before going bad? Also can I vacuum pack and freeze some for later? If so, how long will that keep for?

I have some bacon that came out of an 8 day brine last night and has been forming the pellicle all day today. I plan on smoking it tonight at 200 to an IT of 150. Should I do the fat side up down when I smoke it?

After alot of searching around, I decided on this rolling cart for my MES 30. It's a great fit, gets the smoker off the ground 20 inches and very easy to roll around now on my patio. Also had a nice storage shelf below it.

Did this recipe over the weekend and it came out great using Alderwood pellets with the AMNPS. I think I over judged the size of the pieces and left them in the brine a little too long because they were a bit saltier and dryer than I prefer, but still tasted amazing. Next time around, I will...

I did the brine yesterday evening. I pulled the fish out after 5-6 hours depending on the size of the pieces, washed them with fresh water and then dried with a paper towel. They have been sitting on racks in the fridge for 8 hours now, but no pellicle...
So stoked to find this recipe. I have some fillets fillets defrosting as we speak that my cousin gave me from his recent Alaska trip. I'll be sure to post pictures when I'm done.

My fridge smells smokey still, even after everything has been vacuumed packed. It's teasing me every time I open it.
