    Pork belly burnt ends

Did you smoke the belly whole, then cut it up before the rendering step, or cut it up beforehand?

First hot smoke salmon and Q-view

Do you freeze them? What method do you use to reheat them when you want to eat them, or do you eat them cold? I just made some and am in heaven, but I don't want to eat it all at once. Jim

    Jeff's QUE Sauce Recipe

Got an email from Jeff today - it didn't automatically send me a link for some reason, or it got blocked somewhere along the way. Anyhow, I'm working on it now, finding the same as some of you that it takes a while to cook the ketchup taste out of it. How long do most of you let it simmer...

I just bought the recipes through the e-course - will I get them in an email? There were no instructions on how to retrieve it. Jim

    Identifying good smoking wood.

I actually went into the store I mentioned above, and asked them why it might have been on a list of woods not to use for smoking, and they said the flavor it gives is REALLY strong and that you only want to use a little bit of it along with a weaker wood. I picked up 3.5 pounds of pecan chunks...

    Identifying good smoking wood.

Why is Sassafras in the list of woods not to use for smoking? I was looking at the website of a local bbq supply store that's got some accolades for their bbq, and they sell it. Jim

    Electric Smoker Modifications

I was pursuing this issue the other day, looking at Home Depot for something to use to regulate the voltage, rather than to turn it on and off. I looked at the light dimmers, but the highest-rated one I could find was only 600W, and that's not gonna work. I talked to an electrician friend of...

    Need a vent?

Cool. Hey, for your problem with having formatted, look into a program called Active File Recovery. I haven't used it myself, but someone I worked with was able to recover his entire library of pictures and mp3 files on a hard drive he formatted by mistake.

    Need a vent?

Ok, if you didn't read my Roll Call thread (http://www.smokingmeatforums.com/for...ad.php?t=17934), I have my father's smoker, which was a charcoal smoker that he converted into an electric smoker. I've got the rust all cleaned out of the inside of it, and plugged it in this afternoon to see...

Smoked Turkey Breast with 1 qview

That's cool. The time is more of what I was after - weight just because I couldn't tell by looking at it, and want to gauge how long I need to plan for it. Jim

Smoked Turkey Breast with 1 qview

How many pounds was it and how long did you smoke it? I'm looking for a first-time project, and am thinking about doing a turkey breast. Jim

    New here

With all the rust in this thing, I went and bought a wire wheel and am using my drill to clean it all out. After I've removed all the rust, should I spray on some high-heat resistant paint (Rustoleum makes some that withstands heat up to like 1500 degrees)? I'm planning on spraying it on the...
