    I have had my Chargriller for a little over a year now.  I bought it thinking I could smoke/grill with the same equipment.  The main chamber needs quite a few mods to use effectively as a smoker that need to be reversed if you are going to use it as a grill.  It isn't the end of the world, but...

    So sick of snow...

    Plenty of snow here is Illinois too...  I think it is supposed to warm up for Easter weekend, so I am cautiously optomistic.  Maybe if we all fire up the smokers this weekend we can raise the temp up a little this weekend.  At least everything will smell better.

    I am just glad there is not a lot of pressure from the family for this to turn out well.  I have thoroughly explained that this is completely experimental.  I need to unthaw one of them tonight so that I can see how salty their cure is.  I may need to soak it to try and get some salt out.

    I bought a side of beef from a local butcher. Everything was great except for one little (ok large to me) detail, my brisket accidently was turned to burger.  I thought about it for several hours, and finally gave him a call.  Apparently when my order was taken they forgot to write it down...
