Hey I've been trying to match my local BBQ place Tri Tip and finally got somewhat close. Here is what I have been trying:

12-24 hour in fridge, uncovered, on top of steel rack set on plate
Take out of fridge
1/2 tbsp Granulated Garlic
1 tbsp Smoked Paprika
1 tbsp Black...
