@pi guy I am going to throw something out there that may be a little unconventional. I too have a MES 40" that I removed the controller on. I follwed the instructions described above. I started with an Auber SYL-3615, which is a BBQ Fan controller. Except instead of a fan I had it control a...
I just ordered a hank of sheep casings from them last Thursday. Do you know if they provide you with a shipping confirmation? I have an order confirmation. They ask not to contact them about shipping status until after 5 business days pass. If they have shipped I just want to keep an eye out...
I could see that working! As I researched "bubble knots" and hog rings I came across several threads about using small "zip ties". I think that has merit too. Above I mentioned half my problem was my knot knowledge and the other half would be dealing with my essential tremors in my hands...

@mr_whipple. Perfect. I have a very similar fan controller from the flea market too. The wheels are turning. THANK YOU for the direction and inspiration.

I found 77304 had baby back's for $1.79. And 23322 had chuck roast for $4.49 and pork loin for $1.79. I suspect it will be regional but thought I would throw it out there. One could always hope they will go back to the old ways.
I've had mine since 2014 and love it. Over the years I have had to replace a few thermocouples and touched up some areas with Yoder's paint. I upgraded to the expanded metal grates and believe they are worth while. You will be very happy with it.
