I am looking for a good recipe for an elk roast/steaks. I HAVE NEVER DONE ELK BEFORE. Any helpful tips would be greatly appreciated! I will be smoking this on a Traeger with wood pellets. Any flavor work best for Elk?

I tried these at a family smoke off up in our local canyons, and then I just recently did them for the Super bowl and I added bacon bits to the cream cheese.
But I like what others said about adding berries, that sounds great!

I have a propane smoker that will smoke at 225F.
My Traeger will get up to 180-200 in Smoke mode. Is this the norm? I have not played around at all with the "P" setting it is still at factory default.

I smoked Spaghetti Squash. I got the recipe from The Food Network and it turned out great. I will add pics soon. My wife used her phone because I couldn't find mine, so I just have to transfer them to mine.

I have been helping a friend get his smoker set up and he has a good question.....
1) Should I smoke a turkey and a Ham together. They will be side by side so drippings will not get on either. It will be smoked on a traeger pellet grill.
2) What temp and how long?

I have not been smoking as long as others but I have a few different smokers (Propane, Charcoal, and Stick Burner, and I recently just bought a Traeger pellet grill). I would look online and watch videos as well and see what would work best for you. Maybe go to an expo show or a competition show...
How would you "seal" a smoker from letting too much smoke out?
I was thinking about using that shiny tape that you use for ducts in your house?? Then painting them black with high temp paint from "Rustoleum", good for up to 2000 degrees Fahrenheit?

After reading your threads I am going to start a log book as well. I have been meaning to do so but I haven't. There have been some great smoke recipes that have turned out good and others not so good. I needed this push from reading these threads, thanks for the advice.
