Looks great, I do not own a PBC though some quick thoughts:
1) a store bought smoker box for chunks, do they make such a thing(seen them for chips for gas grills), could you or a friend, or local metal shop make such a thing for you
2) perhaps a mod to add a grate close to the coals to put...
First off sorry for the tardiness of my reply, between getting ready for Christmas and sucking back all the overtime I get my hands on to help pay for it, battling for computer time with the kid, I have just not made it to all the places I would of liked too. I am going to be moving outside...
Everyone had a great meal, truth be told some were skeptical about the smoked turkey and gravy, after those few first bits they were impressed. Sent guests home with some tasty left overs, while keeping a good supply for my family and self.
I was actually surprised at the level of smoke flavour I got, mind you after I prepped my bird I put it back in the fridge to let the skin dry out. My smoker is the Masterbuilt XL propane.
For the fatty I used a standard bacon weave, a pound and quarter of ground trukey, the stuffing was left...
All in all it held the temp nicely, breast meat a bit dryer than I would of liked, nothing to really complain about. Next time I just need to relax and not get ahead of things, guest can always wait for it to be served.
Well It is dead bird day in Canada, well the day before, though since I do not have to work tomorrow all I am going to do is smoke up a stuffing/dressing fatty.
I prepped my 13 pound turkey chucked a quartered-up pear and onion in the cavity, stuck her in the smoker and brought the temp up...
I knew better, though I was being a bit lax in using a safe procedure as it was late and I had decided to do it last minute. The thais were ok the habs on the other hand I should of done outside, weekend is coming up so I will hold off til then and do the job properly.
Here is a minor update, after grinding up the Thia and habs I have decided I will wait until I can bring home my half-piece respirator before I grind up the Bhut Jolokais.
