With chicken I used to remove the water bowl and cook directly over the coals like you would in a drum or PBC, used to run mine at 375, no problem, I like the smoke profile better too.
Purchased an 18.5 thought it would be big enough got tired of working with limited space, now I have a Hunsaker Drum Smoker, if I would have originally purchased the 22.5, I'd still own it although the Hunsaker is a much better cooker than the WSM.

Skip the beer can and spatchcock or halve the chicken, cooks more evenly, I prefer to halve because I can serve as a breast, wing, quarter and or thigh/leg. If you want to put a little smoke on it cook at 225 for the 1st hour then crank up the grill to 375 and pull when the breast is 165.
