    Thanks all.  I tend to take the not so obvious road....tonight, I bought a beef roast.  It was a 2 pounder.  About 2.5 inches thick.  Put on a dry rub, wrapped it all up for 2 hours.  Got the grill going, lump charcoal on the edge, got it to 300 degrees.  Put the roast over the heat, seared it...
