Do I need to empty the BGE of charcoal and place maze at the bottom?

Hello, I have a AMaze as well and can't keep it lit. Try using it in a gaz bbq with lid cracked open and BGE with vents wide open, no luck. Any suggestions? Thank you Gerry.

Your picture show you use a cylinder for cold smoking, I have only seen the maze ones here. Would the maze type work as well or is there a difference...

I use a Big Green Egg bbq/smoker. Have a hard time getting temp below 250F. Do I get the BGE lump charcoal completely ashed over then reduce airflow and wait for temp to reduce? This takes a lot time, is there a better, quicker way to do this? Thanks GG

Your right, it was whole piece vacuum pack. Cooking instructions read to steam for two hours or until fork tender. I went ahead and gave it a two hours on the smoker than steamed it. Next time I will just steam it. Cheers.

Sorry for delay in replying. I have no picture of the smoked meat. It is a Dunn's Smoke Meat Brisket that Costco carries in their Canadian warehouses, Costco may not have them in their US locations. Dunn's is a smoke meat restaurant chain out of Montreal. I did smoke it for two hours...
