I've come to the conclusion that the unit is defective. I put my Maverick probe in, and its reading 257 while the digi q is at 220 and the fan is running non stop. Time to get a hold of customer service. I just bought this 3 weeks ago. Bummed.
I recently purchased a DX2 for my WSM 22, and I can't get that thing up to the 275 range for nothing. I had a layer of unlit coals covered with a chimney of lit, no water in the pan, empty cooker, and the highest it would go was 240. I'm wanting to smoke some wings at the higher temp but it just...
Yes I foiled it at 164* before putting it in the oven. The bark isn't bad, but I'm sure it would have been better if I would've left it on the smoker the whole time. Next time I'll start it a lot earlier so it's not finishing at 3:30 in the morning!
Butt update....Around midnight I couldn't take it any longer so I took it off the smoker, and into the oven for 3.5 hrs to finish up. Total cook time was about 18hrs. I am at 201* and am letting it rest for awhile before pulling. It looks and smells fantastic! Thanks to everyone for all the...
It's a big one, over 9 lbs for sure. I was thinking my thermometer might be defective or something. Good to know that I'm on schedule! I'll just wait it out, and have it for breakfast. LOL!
I have a Char broil sfb, and I'm using a wireless digital thermometer, not a maverick, just a cheapie. The butt stalled out in the 150's forever. Temps have been between 225-250. Currently a little higher around 260. Butt is up to 163* now. It's been about 12.5 hours. Didn't think it would take...
I'm starting to think I'm doing something wrong. Its been 12 hrs and I'm only at 159*! It's been going up a degree every 20 minutes or so! My patience is running out. I know what you all are going to say...Have patience! Trust me, I'm trying, but it's not easy. LOL!
Hey everyone! My name is Chris, and I am becoming a bbq addict! I live up here in Northern Indiana near Notre Dame. I'm very new to the smoking scene, and just started modding my char broil offset. I've lowered the exhaust, made a charcoal basket, tuning plates are cut and ready to go. I put a...
