Beaver the not so white meat...
I would've figured beaver to taste a little gamey considering their musky smell. : ) I once at a fresh roadkill red fox grilled with a little salt and pepper. The meat was tender but the flavor was musky. : )- elk antlers

Hello from Utah!
Hello all you smokin' Joe's out there. I've been smoking meats for a few years. Smoked Jerky has to be my standby all-time favorite thing to smoke.
