    Beer Sediment...?

This is how I was taught to drink wheats, whits, weissens (etc.):[I'll assume the beer is in bottle form] 1) After opening the bottle, let it stand for a few seconds (I can never make it past 10 ). This is primarily to let the beer breathe just a little to get the aromas flowing. 2) Pour...

What do you have ready to drink, and what's on deck for upcoming brew days?

As soon as I can get my hands on the rest of the gear I need, I'll be starting a Belgian abbey-style and possibly an IPA. The latter will depend on the availability of the hops I want. If all else fails, I'll take a trip to the nearest Trader Joe's and stock up on Chimay.

    Smoking a goose

I don't have any suggestions, but I am curious to see what the others have to say.

    Bama Newb

You are correct. I must have left my participle dangling again.

    Bama Newb

Hey guys & gals, I finally bit the bullet and got a smoker after years of whining about how no one in my family could get the Q right. I'm currently using an el cheapo off brand electric that my wife bought for me on my b-day. Don't tell her, but I really hate the damn thing. Can't control the...

    Duck

Wow, that's a bit more involved than I was expecting but I might have to give it the ole' college try. The duckling is store bought. You think if I remove some of the excess fat and score the skin I might get a crispier skin in the smoker rather than moving it to the oven? My wife is going to...

    Duck

Thanks a ton. I have a bag of apple wood begging to be used (usually save it for the fish since I can't get alderwood). Thanks for the suggestions.

    best beer for BBQ

Depends on the kind of Q. If you're doing a dryrub I would go with a trappist style. If you're going heavy on the sauce then I would suggest an abby style. Chicken and pork would definitely be best with a wheat, wit, or trappist. I would say that if you do go with the trappist keep it to a...

    best beer for BBQ

As an official UNOB delgate (United Nations of Beer) maybe I can help with food pairings. It can be a lot like trying to pair the perfect wine with your meal; lighter beers go great with poultry and lightly smoked pork, darker beers for heavily smoked pork and most beef. The trickiest part comes...

    Duck

This is my first go around with smoking a duckling. I can't tell you what the weight is off the top of my head, but I would estimate it to somewhere between 3-5lbs. Can anyone tell me what the prime temp should be while smoking it and which wood would be best? Since duck is mostly dark meat, I...
