Is there any special way to do this If I have a larger turkey that I want to smoke?
Also, could I spatchcock it and just cut it in half that way? The spatchcock method sounds good but I don't think the turkey will fit laid down in my 18" WSM.
ahhh I'll have to try that and see if it helps. Any ideas on what to use to light those starter briquettes? I usually try to find old newspaper to burn under the bucket.

Picked it up off craigslist for $20. Cleaned it off and replaced the cooking grates, new water pan, side door and dampers. Its an old model with a wooden handle. Best $60 ever! I'm gonna practice smoking a turkey this weekend.
As the title says, how do I clean a WSM? Just normal soap and water? Is there anything I can use to deep clean an old WSM that's been sitting for a while that normal soap water can't do? Or should I just leave it as is? Of course I'd just like for mine to look good :P

Everything looks like it was there, albeit some of it I didn't plan to use like the grates due to rust. But the exterior shell is in good shape. The bottom dampers are in bad shape and won't move. I'm hoping I can just drill out the rivets and put in the new ones that i believe will just come...

Can someone tell me if the damper kits and door assembly are universal between the 22.5 and 18.5? I can't find anyone with 18.5 parts in stock, but can find the 22.5 easily... Does Lowes/Home Depot sell this stuff in store?
