Welcome Gene! You came to the right place. Tons of good information on these forums. A lot of what you do will be trial and error but jump in there and enjoy every minute. For me. backyard smoking became a passion. Now I do lot's of events and catering and love every minute of it!
Chef Willie is right, lot's of opinions on here, The Kingsford Comp product is great! We choose to use mainly good quality Oak stick with hickory for flavor. On really long cooks, I opt for High Quality Lump because it has very little ash and a great taste!
A trailer has many advantages from my point of view. There are a lot of events that we vend at that don't allow Food trucks. Our trailer also works well for small venues such as family events. We are working on a large event trailer now but plan on keeping our smaller one.
