    Good rule of thumb I follow, as do some folks here; "When in doubt, toss it out." It's a shame to lose it all, but it would be much worse to make yourself, friend or loved one sick.

    I always brined mine in a simple salt brine when I have done them in the past. Always came out like roast beef in my opinion. Wish I had more time for hunting these days.

    That's interesting, never seen it before. Does it impart a Tabasco flavor to what is being smoked?

    Cold Smoked Patty Sausage Fail.....or was it?

    It may mellow out some, but probably not enough. 10 hours is a lot of smoke for ground meat in my opinion. Since it hasn't been cooked, i would think you could grind up more meat and mix it all together to cut the smoke flavor.

    How long were they off of the tree? I read that they need to be left at room temperature for a while to fully ripen. The pear honey sounds good, I might have to try making some of that as well.
