    smoke in my mes 40

    I am doing spare ribs in the 40" MES now and plan on starting a butt at 21:00 should go about 14 hours so should be good to go by lunch. I am going to use the amazen smoker I bought a few months ago for the first time. Should be exciting.

    I used scissors and a butcher knife to get through the backbone and then split the 'x' cartilage and flattened it out then thumbed around the keel bone and removed it and the cartilage to the tip
