I was a chef for over 20 years & have always been interested in smoked foods. I have just made a smoker & firebox & hope to smoke some local produce to sell.
My district is a cool upland area north of the dividing range that surrounds Melbourne & its suburbs.
Apart from the ubiquitous sheep-meat, we also have access to a wide range of game & vegetable products.
I won't mention the "hopping" variety of game right now.....(but it tastes great!)
